Chocolate Hazelnut Brownie Cake

Ohhh its raining cakes on the blog... but this one happened for a special occassion...
Its my 30th birthday...and yes i baked a cake for me!!
My sister wasnt here to pamper me , and was really bored of those readymade cakes....wanted something to satisfy my fetish for chocolates and coffee....
So thats how my birthday cake happened!! Happy Birthday To Me!!!



Ingredients:

For the brownie cake:

1 Cup Maida
1 Cup Powdered Sugar
1/2 Cup melted chocolate
3/4 Cup Oil
2 Eggs
1/2 tsp Baking powder
1/4 tsp Soda Bi carb
1/2 Cup crushed Hazelnuts ( use walnuts instead)
2 tsp instant cofee dissolved in 1/4 th cup water and 2tsp sugar

For the Icing:

3/4 cup melted chocolate
1/4 cup cream
1/2 cup Philsbury Vanilla Icing (optional)
Coloured chocolate gems to decorate

Method:

Sieve the maida with baking power and soda bicarb and mix with crushed hazelnuts( this will not let the nuts settle at the bottom of the cake while baking)
Pre heat the oven at 180 deg celcius
Beat the eggs in a bowl till fluffy  Add sugar , oil and melted chocolate while beating.
Now fold in the maida and mix to a batter of dropping. Adjust the consistency with some milk if too thick . Grease the cake mould with some oil and dust with some maida..
Poour the batter in the cake mould and bake for about 25 mins , checking with a skewer at the center of the cake.

Cool the cake and slice it.
Drizze the coffee sugar mixture over both the cake slices , just to make them moist .
Now apply half the vanilla icing on the bottom cake slice and carefully put the top slice over it.

Heat the cream in a pan , and pour over the chocolate and wisk till a homogenous mix is formed.. .....Add some instant coffee powder to it.
Let it cool for some time.
Pour the warm chocolate icing over the cake and spread evenly with a knife.
Add the remaining vanilla icing in a piping bag with a star nozzle and decorate the cake.

The cake tastes best when sliced heated in microwave and served with cold vanilla icecream.(dnt need to have any chocolate sauce , as the icing melts to form a nice bubbling sauce...)
