Mango Pudding

Amist these delayed monsoons,watercuts and gloomy yet sweaty whether , the only positive thing happening , is that Mangoes are still flodding the market. And I decided to make the most of it!
Cant really get enough of them really!
So today we shall be making a Mango Pudding! Nothing complicated , just a few ingredients and you'll be surprised how a gourmet dessert comes out of such simple ingredients.

Mango pudding is a very popular Dim Sum dessert , quiet famous in China , Thailand , Singapore , Malaysia , though , its quiet surprising to know that the dessert has its origin in India..
Traditionally made with mango pulp sugar and milk , this modern dessert incorporates gelatine and at times coconut milk for enhanced flavours and textures.
I have made it with simpler at home ingredients and the best Alphonso Mango.




Ingredients:

1 Alphonso Mango diced
2 cups Mango Pulp
2-3 tsps Sugar, depending on the sweetness of mango pulp
1 scoop Vanilla ice cream
1 tbsp Condensed milk (optional)
3 tsps gelatine
1/4 cup water

Method:

Dissolve the gelatine in 1/4 cup hot but not boiling water,stirring continuously.Now add vanilla ice cream to the gelatine mixture and fold gently till the ice cream melts and mixes with the gelatine mix.
Now add this mixture to the mango pulp and fold.
Add sugar and condensed milk and mix.
Take individual serving glass bowls , and rinse them with warm water and add some cubes of mango in each bowl. Fill the bowls with mango pulp mix and add some more mango cubes to it.
Let the mixture set for 15 - 20 mins in refrigerator.
Garnish with some more mango and candied orange peel.
