Cheese Crackers

Was looking at the half nibbled pieces of cheese cubes ( my son loves eating cheese like jerry the mouse , but more than that he loves peeling them from their wrappers,which means he needs a new cube everyday) and thinking of the best way to put them to use. Pizza and pasta hae become quiet synonymous to cheese, atleast in India. But my lil toddler is currently not a pizza person. Thank god!!
But he loved all the cookies I had baked so far. A savoury cookie for his tiffin would be a refreshing change,I thought. So finally those cheese pieces found a nice recipe to be used in!

I always thought baking cookies were quiet tedious and required lots of experience and specialisation. Not until I tried baking myself. Baking cookies is really simple,fun and quet a stress buster for me!
And these cheese savoury versions are just fab!

Ingredients:
1 1/4  Cup Maida/All purpose flour
3/4 Cup Grated Processed Cheese
1/2 Cup Butter/Margarine ( I had margarine at home so tried to substitute it for butter)
1 Tsp Crushed Pepper (optional)
1/2 tsp Namak Shamak
1/2 tsp Baking Powder
1-2 tbsp Milk

Sieve maida,salt,baking powder in a bowl. Add pepper powder,cheese and butter. Knead together using milk as required to form a stiff dough.

Roll out into a roti 1/2 cm thick and cut out using cookie cutter.

Grease baking tray with butter.
Preheat oven to180 deg.C.
Bake the cookies for 10-15 mins until the base and corners turn light brown.
Cool and transfer into airtight jar.
