Peanut Butter Cookies

Woken up with the usual monday blues. Could already see a busy hectic day ahead. Rushing to toddlers school while struggling with his tiffin menu ,then rushing off for grocery shopping ,  to finish it just in time to rush back to school . Then lunch and then the much awaited afternoon Me Time! Finally ! Atleast I manage few moments of peace!
Got peanut butter in todays grocery shopping. Actually , every week , I buy something new , different to try out new recipes from. This week its peanut butter. And making cookies with the crunchy peanut butter for my lil toddler! I already know , that a peanut butter sandwich packed for tiffin would come back home untouched. But cookies is something I am pretty sure , would be a hit for my kid!
Cookies are always associated with cakes , we always say" Cakes and Cookies". There's an interesting reason behind it . Cookies were invented by accident. A small amount of cake batter was used to test the oven temperatures before baking a big cake. These little test cakes were called "koekje" in Dutch ,meaning little cake. And thats how the name "cookie".

 So lets bake our koejke..oops cookies!

Ingredients:
1 1/4 cup Maida /All purpose flour
1/2 cup unsalted Butter
1/2 cup Crunchy Peanut Butter
1/2 cup powdered Sugar
1/2 tsp Vanilla essence

Preheat oven to 180 deg celcius.
Beat the butter,peanut butter and sugar together using a spatula ,till creamy and fluffy.
Add vanilla essence and mix. Gently add maida and mix. Knead using hand and make small balls of the dough and flatten them slightly
Grease the baking tray with some butter and place the balls , keeping them at some distance from each other.

Bake them for 10 -15 mins, till browned at the edges. Do not over bake.
Cool them on a rack and transfer into an airtight jar.

Crumbly, sweet ,savoury and melt in the mouth!! And so quick and easy! A must try!
