This is not an Traditional South Indian Appam recipe in a strict sense. This recipe has come down to me from my mother in law, she makes mean appams... ooh I love them.
This one is a quick fix solution for the festival days when you forget to buy sweets or when you tend to wake up late and your hubby and kid are in a mood for something sweet.
These are very nutritious and make a good tiffin snack for kids.
I personally prefer home cooked sweets to the shop ones so I am always on a look out for something new.
Since Janmashtami is fast approaching I decided this recipe would be good prasad for Kishen Kanhaiyya!!!
Ingredients:
1 Cup Grated Coconut (You can also use dabur homemade coconut milk)
1 Cup Sooji (the fine variety)
1/2 Cup Poha
1/2 Cup Jaggery
1/2 tsp Elaichi Powder
1/2 tsp Baking Powder(optional)
Ghee
Method:
Grind the coconut finely.
Mix the ground coconut (or the coconut milk), sooji, poha, jaggery and the elaichi powder and cover and set aside for 1/2 hr. Now add the baking powder and mix.
Heat an appam pan. Add a little ghee. Spoon out a little of the batter and cook on low heat till the appams start turning golden brown. Now turn them over and cook for 5 more mins.
