Coconut Bananas with Vanilla Ice cream



Here's a little hatke desert. Actually it has a little tropical flavor. 

The Banana I used here are the plantain bananas the you can purchase at any South Indian shop.


Ingredients:

2 nos.                Bananas 
                       
1/2 cup              Desiccated coconut     

1/2 cup              Sugar
                           
a pinch              Pepper powder             

a few drops        Vanilla essence             

1 slab                Vanilla ice cream           

1/2 cup              Coconut slivers              

Butter or Oil for frying

Method:

Toast the coconut slivers in the microwave till golden brown.

Cut the bananas and sprinkle the pepper powder over it. Mix the desiccated coconut, sugar and the vanilla essence.

Heat the butter or Oil in the pan. Now roll the banana in the coconut sugar mixture and put it in the pan.

Fry till the sugar caramelizes and becomes golden in color.

Remove from heat.

Arrange the still warm bananas in a platter, add the slab of vanilla ice cream and decorate with coconut slivers.
