Cashew Rasgulla Bites


Raksha Bandhan is here and so is the time to catch up with cousins.

This is a great time to bond with cousins. We try and celebrate  Raksha Bandhan together. And its a huge celebration....

You can imagine the amount of sweet these guys have to gorge on as each one of us stuff mithais in their mouth. Its always like "gimme a small piece".

So this year I decided to make bite sizes mithai.Very convinient and easy to prepare with home made Mava.
Yes, you can make mava at home, and what more, with milk powder.

Ingredients:

for the Mava

1 cup       Milk Powder
2 tsp        Water




Mix the milk powder and the water in a microwave proof bowl and microwave it for 2 mins or till it becomes grainy. Your home made mava is ready.

for the Cashew Bites

10 to 15    Cashew nuts
1/2 cup      Mava
1/2 cup      Powdered Sugar
1/2 tsp       Elaichi Powder
4 to 6         Rasgullas
a few drops of any food color
Cherries for garnish

Method:

Grind the powdered sugar, mava, cashews, elaichi powder in a mixie. Take it out in a plate and divide into two parts or more. Add the different food colors to the dough and knead throughly. If it becomes hard just microwave it for 5 sec and then knead it.


Roll the dough and cut into desired shape with a cookie cutter.


Squeeze the rasgullas and cut them into half. Deseed the cherries.

For serving, place the cashew bites on the plate. Put the rasgullas on them and decorate with cherries.
