Baked Jam and Coconut Roll








This is something I just made on a whim!!!!!!
Nothing was planned, I had just made a bread dough and suddenly I got a sweet craving......
So I decided to try something different. It turned out just fine.

Ingredients:

1/2 cup       Mix fruit Jam
1/2 cup       Dessicated Coconut

for the dough:
1 cup          Maida
1 tsp           Baking Powder
2 tsp           Dry Yeast
1 tsp           Oil
1/2 tsp        Namak Shamak
1/2 tsp        Sugar

Method:

Dissolve the yeast in 1/4th cup of warm water to which sugar is added. Let it stand for 10 mins till the yeast becomes frothy. To the Maida add the salt and the yeast. Knead the dough and add the oil. Now let it stand in a warm place for 1 hr.

After an hour, punch the dough and knead again.

Take a little dough and roll it like a chapati. It should not be very thin. Now put a layer of jam. Sprinkle the coconut on it and make a roll. Seal the edges. Cut the roll in 4 to 5 parts. Now flatten each part slightly.

 











Grease a baking tray. Bake the rolls at 180 degrees for 35 mins.

When slightly cool, sprinkle powdered sugar and decorated with glazed cherries.
