Back from a fun and adventure filled vacation and routine barely getting on track, I was still juggling all the tasks...Most hectic being,washing bags full of wollens and soiled clothes,and managing it with daily household chores , cooking being the inevitable one ,especially after a long time away from home cooked food!
And amist it all , my little toddler was longing to feast on my home made cake...Apparently that was the only thing he missed away from home. So, just for my little one, I made this cake, alongside cooking my dinner....Gosh...I really hoped I didnt mix up the masalas into the cake!
So , heres a quick cake for those busy moments ,when you cant afford any more time for beating up those eggs and wait for the correct consistency...
Ingredients:
1 Cup All pourpose Flour /Maida
3/4 Cup Sugar
3/4 Cup Oil
2 Eggs
1/2 Cup chopped Walnuts
1/2 tsp Baking Powder
1/4 tsp Cinammon Powder (optional)
1/4 Cup Water ,mixed with 2-3 tsp instant coffee powder
Sift flour with baking powder and set aside.
Preheat oven at 180 deg C. Grease and dust baking tin and set aside.
Beat the eggs with an electric beater till pale. Add sugar and beat for another minute. Add oil and beat again.
Gently add the flour mix and fold to form a smooth batter. Add cinammon powder and coffee mixture and beat together to form a batter of ribbon consistency.
Dust the walnuts in flour and fold them in the batter.
Transfer batter in cake tin and bake for 20- 25 mins or till a knife inserted at the center comes out clean.
