Tropical Tornado Cake / Moist Pineapple Cake



Its the beginning of winter and fresh winter fruits and veggies are already here.....I love this season especially here in Mumbai where the weather turns so pleasant. Its a huge respite from the hot muggy days!!!

Just yesterday I got some yummy, fresh and juicy pineapples. Oh, yes and since Christmas is also nearing I decided to indulge in some "Cake Therapy".....

I decided to add some tropical and Caribbean flavors to my cake...and my little twist by adding Malibu!!! And the results were amazing. The pineapple added the juiciness which was balanced by the tangy punch of orange. The Malibu gives just the subtle hint of coconut....

Ingredients:

1 cup        Flour (maida)
1 cup        Sugar (powdered)
1 cup        Oil 
2               Eggs
1 cup        Diced fresh pineapple
1 tsp         Baking Powder
1/2 cup     Malibu
juice of 1  Orange


Method:

Sieve the flour and the baking powder. Beat the eggs till fluffy.


Cream the sugar and the oil. Add the eggs and beat, now add the orange juice and half of the Malibu and beat. Slowly add the flour a little at a time and fold in the mixture (do not beat) till all the flour is incorporated. Now add the diced pineapples and mix.


Dust the cake tin and pour in the cake batter. Bake at 180 degrees for 35 to 40 mins.


The cake will be moist because of the pineapple.

Cool and sprinkle the remaining Malibu over it.

You can decorate it with fresh cream or Pineapple and orange wedges.
