Crunchy Suran Patties




Today is Vat Purnima……. and yes I am fasting.

Vat Purnima fasting is observed by married women for the well being of their husbands. The main ritual on the day includes tying of the red or yellow thread around the banyan tree and fasting from sunrise to sunset.

For me, I break my fast the next day so as most of you must be knowing empty stomach can lead to sleepless nights with nightmares often related to food.  Yup I get those…….

Actually I wanted to break away from the regular sabudana khichdi and potato kachori.

So here is something I tried with a humble Suran (Ya I think it is seriously under rated).

Ingredients:

½ kg                    Suran (Yam)                         

2                          Potatoes                             

4 to 5                   Green Chillies                     

1 tsp                   Jeera                                  

200 gms             Groundnuts                        


½ cup                 Sabudana                          
(optional)

1                         Lemon                              

about 1 tsp          Namak Shamak                

2 tsp                   Arrowroot                      
(optional)
Ghee for  frying

Method:

Roast the Peanuts , remove the chilka and grind them coarsely.

Cut the chillies finely.

Cut and clean the suran. You have to be a little careful here as suran can sometimes cause itching. So just apply some oil on your hands before handling the suran.

Now pressure cook the suran and the cut and peeled potatoes. Take about 2 to 3 whistles.

In a bowl take the suran and the potatoes and mash them. Add the juice of one lemon(Please don’t skip this. It is to remove the residual itchiness), salt, jeera, 3 tsp of crushed groundnut, Sabudana(just ¼ cup if adding) and the arrowroot (this is in case the binding if the mixture turns loose).

Make patties out of this mixture. Take the crushed peanuts in a plate. Roll the patties in the crushed peanuts, they must be evenly coated.

Heat ghee in a tawa and fry the patties till golden brown on a low flame.

Instead of using arrowroot you can also use the Upwas Bhajani that you get in the stores.
